Cooking instructions for whole duck

  • Preheat oven to 180’C/350’F/ Gas mark 6
  • Remove packaging, and empty the duck cavity, once clear, weigh the duck.
  • Place the duck in a Pyrex bowl, prick the skin and pour one cup of boiling water to help crisp skin.
  • Season the duck with salt and pepper, or any spice/ herbs of your choice to add flavour.
  • Place on the middle shelf of the preheated oven and cook for allocated weight time. (see cooking times below.)
  • Turn the tray once half way through to ensure even cooking
  • Drain off excess fat and keep for roast potatoes,
  • When juices run clear, remove carefully from the oven, cover with tin foil and let rest for 20 minutes before slicing
  • Serve with any side salad that you find delicious
  • Cooking times: average 2hours, Serves 4 – 6 people

Tips:

  • Stuff with Bread Stuffing seasoned with salt and pepper
  • Serve with piped mash, red cabbage and a spoon of blackberries on the side.
  • Serve with sauce or gravy of choice
